Simple Chickpea Pasta Recipe


1 can chickpeas
Cherry tomatoes
Lemon juice
Rapeseed oil
Hard cheese

Here is our go to midweek simple chickpea pasta recipe to make at home. When you’re short on time during the week this pasta is simply delicious, quick to make and super fresh.

Boil a pan of hot salty water, once boiling add the spaghetti. Whilst the pasta is cooking, drain the chickpeas, chop the tomatoes in quarters and finely chop the mint and parsley. Once the spaghetti has cooked, drain it, add a drizzle of rapeseed oil and stir. Next add the chickpeas, cherry tomatoes, a good squeeze of lemon and salt and pepper. Serve up and garnish with mint, parsley and hard cheese of your choice. YUM.
